When my daughter had a sleepover, I ran out of pancake mix. I needed the fastest, easiest recipe I could find. This one turned out to be pretty good. Basic, which worked for me, and they didn’t realize I was did it from scratch.
1 cup of flour
1 cup of milk
2 tablespoons of sugar
2 teaspoons of baking powder
2 tablespoons of vegetable oil
a pinch of salt
The recipe calls for mixing the first four ingredients first, then slowly adding your milk. I didn’t catch it when I made them and put it all in together and mixed. Still turned out great!
This recipe should make about 12 pancakes. Since I was only cooking for two girls, I made four and saved the rest in the refrigerator. I used it for the next couple of days; just stir and pour!
